  • 2 cups zesty Italian salad dressing (plus 1/4 cup for basting)
  • 12 ounces lemon-lime soda (1 can, such as Sprite)
  • 14 ounces Caesar salad kits (two 7-ounce kits, including romaine, dressing, and toppings)
  • 12 ounces rotini pasta (about 3 cups dry)
  • 1 cup freshly grated Parmesan cheese
  • 1½ cups prepared Caesar salad dressing (adjust to taste)
  • 1½ cups Caesar salad croutons


Instructions

  1. Place the chicken breasts in a large resealable bag or covered container. Pound thicker pieces to about 1 inch thickness for even cooking.
  2. In a bowl, whisk together 2 cups Italian dressing and 12 ounces lemon-lime soda. Pour the marinade over the chicken, seal, and refrigerate overnight (or at least 4 hours).
  3. Remove the chicken from the refrigerator 30 minutes before grilling. Preheat the grill to 400°F (200°C).
  4. Take the chicken out of the marinade, letting excess drip off. Grill for 7 to 9 minutes per side, or until the internal temperature reaches 165°F (74°C).
  5. During the last minute of grilling, baste each side with 1/4 cup fresh Italian dressing. Remove from grill and rest under foil for 10 minutes before slicing.
  6. Meanwhile, bring a large pot of salted water to a boil. Cook 12 ounces rotini pasta until al dente according to package instructions. Drain and rinse under cold water to cool completely.
  7. In a large mixing bowl, combine the cooled pasta and chopped romaine from the Caesar salad kits.
  8. Add 1½ cups prepared Caesar dressing along with the dressing packets from the kits. Toss until evenly coated.
  9. Stir in 1 cup freshly grated Parmesan cheese.
  10. Just before serving, fold in 1½ cups croutons for crunch.
  11. Slice the rested grilled chicken and arrange over the pasta salad. Garnish with extra Parmesan and crushed croutons if desired, then serve immediately.
