  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder

  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1 turkey (16-18 pounds), patted dry
  • 8 cups chicken stock


Instructions

  1. Preheat the oven to 325°F (163°C). Remove the innards from the turkey and pat dry with paper towels.
  2. In a food processor, combine paprika, cayenne pepper, garlic powder, onion powder, thyme, oregano, salt, and pepper. Pulse until finely ground and then mix with softened butter to make a paste.
  3. Gently loosen the skin of the turkey and rub the spice butter mixture under the skin, ensuring even distribution.
  4. Pour 2 cups of chicken stock into the bottom of your roasting pan. Place the turkey on top and cover with foil.
  5. Roast the turkey in the oven, basting every 30 minutes with the drippings from the pan. Add more chicken stock if it runs low.
  6. After 2 hours, remove the foil and continue roasting, basting every half hour for an additional 2 hours.
  7. Check the internal temperature, ensuring it reaches 165°F (74°C) in the thickest part of the thigh.
  8. Let the turkey rest for 20 minutes before carving and serving.
