  • 8 corn tortillas
  • 3 tbsp olive oil, divided
  • 14 oz firm tofu, pressed and cubed
  • 2 tsp Cajun seasoning
  • 3/4 tsp salt, divided
  • 2 cups shredded green cabbage
  • 1 ripe mango, julienned
  • 2 tbsp fresh lime juice, divided
  • 1/4 cup chopped fresh cilantro
  • 1 medium cooked beet, chopped (about 1/2 cup)
  • 1/2 cup sour cream
  • 1 garlic clove, minced
  • 1 ripe avocado, sliced


Instructions

  1. Preheat the oven to 400°F (200°C) and position a rack in the upper third of the oven.
  2. Brush both sides of the corn tortillas with 1 tablespoon of olive oil. Arrange them on a baking sheet and bake for 10–12 minutes, turning halfway through, until browned and crisp. Transfer to a wire rack to cool.
  3. In a medium bowl, combine the shredded cabbage, julienned mango, 1 tablespoon lime juice, chopped cilantro, and 1/4 teaspoon salt. Toss well and set aside.
  4. In a small bowl or food processor, blend the cooked beet, sour cream, garlic, remaining 1 tablespoon lime juice, and 1/4 teaspoon salt until smooth and creamy.
  5. Heat the remaining 2 tablespoons olive oil in a large skillet over medium-high heat.
  6. Add the tofu cubes, Cajun seasoning, and remaining 1/4 teaspoon salt. Cook for 8–10 minutes, stirring occasionally, until golden brown and lightly crisp.
  7. Assemble the tostadas by placing the crispy tortillas on serving plates. Top evenly with the Cajun tofu.
  8. Add a generous layer of the mango cabbage slaw, spoon over the beet crema, and finish with sliced avocado.
  9. Serve immediately while the tostadas are crisp.
