  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 12 oz rigatoni pasta

  • 1 cup whole milk
  • 1 cup freshly grated Parmesan cheese
  • 1 cup shredded cheddar cheese
  • 1 tsp salt, or to taste
  • 1/2 tsp black pepper, or to taste
  • 1 tbsp fresh parsley, chopped (optional for garnish)


Instructions

  1. Bring a large pot of salted water to a boil. Cook the 12 oz rigatoni pasta according to package directions until al dente. Drain and set aside, reserving 1/4 cup pasta water.
  2. Toss the 1 lb cubed steak with 2 tbsp Cajun seasoning until evenly coated.
  3. Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add the steak cubes and cook for 2 to 3 minutes per side, or until the desired doneness is reached. Remove from the skillet and keep warm.
  4. In a medium saucepan, melt 2 tbsp butter over medium heat. Add the minced garlic and cook for 30 seconds until fragrant.
  5. Pour in 1 cup heavy cream and 1 cup milk. Stir and bring to a gentle simmer.
  6. Gradually whisk in 1 cup Parmesan cheese and 1 cup cheddar cheese until the sauce is smooth and creamy.
  7. Season the sauce with salt and black pepper to taste.
  8. Add the cooked rigatoni to the cheese sauce and stir until evenly coated. Add reserved pasta water if needed to loosen the sauce.
  9. Divide the cheesy rigatoni among serving plates and top with the Cajun steak tips.
  10. Garnish with fresh parsley and serve immediately.
