Instructions
- Bring a large pot of salted water to a boil. Cook the 12 oz rigatoni pasta according to package directions until al dente. Drain and set aside, reserving 1/4 cup pasta water.
- Toss the 1 lb cubed steak with 2 tbsp Cajun seasoning until evenly coated.
- Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add the steak cubes and cook for 2 to 3 minutes per side, or until the desired doneness is reached. Remove from the skillet and keep warm.
- In a medium saucepan, melt 2 tbsp butter over medium heat. Add the minced garlic and cook for 30 seconds until fragrant.
- Pour in 1 cup heavy cream and 1 cup milk. Stir and bring to a gentle simmer.
- Gradually whisk in 1 cup Parmesan cheese and 1 cup cheddar cheese until the sauce is smooth and creamy.
- Season the sauce with salt and black pepper to taste.
- Add the cooked rigatoni to the cheese sauce and stir until evenly coated. Add reserved pasta water if needed to loosen the sauce.
