Description

Soft and chewy Cake Mix Peanut Butter Cookies made with just four simple ingredients. Yellow cake mix, creamy peanut butter, oil, and eggs create an easy peanut butter cookie with lightly golden edges, tender centers, and classic crisscross tops.

Ingredients

Scale
  • 1 (13.25-ounce) box yellow cake mix
  • 1 cup creamy peanut butter
  • 1/2 cup vegetable or canola oil
  • 2 large eggs

Instructions

  1. Preheat the oven to 350°F. Line cookie sheets with parchment paper.
  2. Add the yellow cake mix, creamy peanut butter, oil, and eggs to a large mixing bowl. Mix with an electric mixer until the dough is crumbly but moist and holds together when shaped.
  3. If the dough is too sticky to handle, refrigerate it for about 20 minutes.
  4. Use a 1 1/2-tablespoon cookie scoop to portion the dough. Roll each portion between your palms until smooth.
  5. Arrange the cookie dough balls approximately 2 inches apart on the prepared baking sheets.
  6. Gently press a fork into the top of each dough ball in opposite directions to create a classic crisscross pattern.
  7. Bake one cookie sheet at a time for 10 to 12 minutes, until the edges are lightly golden while the centers remain soft.
  8. Allow the cookies to rest on the baking sheet for about 15 minutes so they can finish setting before serving.

Notes

  • Use conventional creamy peanut butter for the most consistent texture. Natural peanut butter that requires stirring may change how the cookies spread.
  • For especially soft cookies, begin checking them at 10 minutes and avoid overbaking.
  • If the cookie dough feels sticky, chill it for approximately 20 minutes before scooping.
  • White or vanilla cake mix can replace yellow cake mix for a lighter flavor.
  • Crunchy peanut butter can be used if you prefer additional peanut texture.
  • Chocolate chips, peanut butter chips, Reese’s Pieces, or white chocolate chips can be added for variation.
  • Store cooled cookies in an airtight container at room temperature for up to 4 days or refrigerate for up to 7 days.
  • Freeze baked cookies for up to 3 months. Unbaked dough balls can also be frozen and baked from frozen by adding approximately 1 to 2 minutes to the baking time.
