- 1 English cucumber, diced (about 2-3 cups)
- 1 ripe avocado, diced
- 1/4 cup red onion, finely diced
- 4 oz imitation crab meat or real crab meat, shredded
- 2 tbsp mayonnaise
- 1 tbsp soy sauce
- 1/2 tsp sesame oil
- 1 tsp rice wine vinegar
- 1/4 tsp sugar
- Sesame seeds or Furikake seasoning (optional)
Instructions
- In a small bowl, whisk together mayonnaise, soy sauce, sesame oil, rice wine vinegar, and sugar. Set aside.
- Dice the cucumber, avocado, and red onion. Shred the crab meat if using real crab.
- In a medium bowl, combine the cucumber, avocado, red onion, and crab meat.
- Pour the dressing over the ingredients and toss gently until everything is well coated.
- Sprinkle sesame seeds or Furikake seasoning generously over the top and serve immediately.
Notes
- For best freshness, add avocado last to prevent it from browning.
- This salad is best enjoyed immediately. If storing, keep in an airtight container in the fridge for up to a day.
- If you prefer a spicier salad, add sriracha to the dressing or drizzle over the top.
