Description

This California Roll Cucumber Salad is a fresh and creamy twist on the classic California roll. With the combination of cucumber, avocado, crab meat, and a tangy Asian-inspired dressing, it’s the perfect side dish, lunch, or light dinner option. It’s quick to prepare, healthy, and bursting with flavor.


Ingredients

  • 1 English cucumber, diced (about 2-3 cups)
  • 1 ripe avocado, diced
  • 1/4 cup red onion, finely diced
  • 4 oz imitation crab meat or real crab meat, shredded
  • 2 tbsp mayonnaise
  • 1 tbsp soy sauce
  • 1/2 tsp sesame oil
  • 1 tsp rice wine vinegar
  • 1/4 tsp sugar
  • Sesame seeds or Furikake seasoning (optional)


Instructions

  1. In a small bowl, whisk together mayonnaise, soy sauce, sesame oil, rice wine vinegar, and sugar. Set aside.
  2. Dice the cucumber, avocado, and red onion. Shred the crab meat if using real crab.
  3. In a medium bowl, combine the cucumber, avocado, red onion, and crab meat.
  4. Pour the dressing over the ingredients and toss gently until everything is well coated.
  5. Sprinkle sesame seeds or Furikake seasoning generously over the top and serve immediately.

Notes

  • For best freshness, add avocado last to prevent it from browning.
  • This salad is best enjoyed immediately. If storing, keep in an airtight container in the fridge for up to a day.
