Description

California Roll Sushi Bowls offer a fresh and exciting twist on the classic sushi roll, providing all the beloved flavors without the complexity of rolling sushi. This recipe combines the delicious ingredients of a traditional California Roll – imitation crab, avocado, cucumber, and a spicy sriracha mayo – all served on top of perfectly cooked sushi rice. It’s a quick, affordable, and customizable meal that’s perfect for any occasion.


Ingredients

  • 2 cups sushi rice (Japanese Calrose rice, uncooked)
  • 2 cups water
  • 3 tbsp rice vinegar
  • 2 tbsp granulated sugar
  • ¾ tsp salt
  • ¼ cup mayonnaise (preferably Japanese kewpie mayo)
  • 1 tbsp sriracha sauce
  • 8 oz imitation crab (chopped into bite-size pieces)
  • 1 cup sliced or diced cucumber
  • 1 avocado (peeled, pitted, and diced)
  • 1 small carrot (shredded)
  • 1-2 nori sheets (chopped or crumbled)
  • 1 tbsp sesame seeds (a mix of black and toasted sesame seeds)
  • ¼ cup low-sodium soy sauce (for serving)


Instructions

  1. Rinse the sushi rice under cool running water until the water runs clear. Drain the rice.
  2. Combine the drained rice with water in a saucepan, bring it to a boil, cover, and reduce the heat to low. Simmer for 15 minutes without removing the lid. After 15 minutes, remove the pot from heat and let it sit for another 5 minutes without removing the lid.
  3. In a small bowl, mix together the rice vinegar, sugar, and salt. If needed, microwave the mixture to dissolve the sugar. Stir the mixture into the cooked rice and set it aside to cool.
  4. In a small bowl, combine mayonnaise and sriracha sauce to make the spicy mayo.
  5. Prepare the toppings: slice the avocado, cucumber, and carrot. Chop the imitation crab into bite-sized pieces. Crumble or chop the nori sheets into small pieces.
  6. Divide the cooled sushi rice evenly between 4 bowls. Top each bowl with imitation crab, cucumber, avocado, shredded carrot, and nori. Drizzle with the spicy mayo and sprinkle sesame seeds on top. Serve with soy sauce on the side.

Notes

  • Make sure to rinse the rice thoroughly to remove excess starch and achieve the perfect sticky texture.
  • Adjust the amount of sriracha in the spicy mayo to your preferred level of heat.
  • Use wooden utensils when mixing the sushi rice to avoid breaking the delicate grains.
  • If you prefer real crab, you can substitute the imitation crab with fresh crab meat.
  • Sushi rice can be made up to a few hours ahead of time, but it’s best enjoyed the same day.
