Instructions

  1. Preheat your oven to 325°F (160°C). Line a 9×13 inch baking pan with parchment paper, leaving overhang for easy removal.
  2. In a medium bowl, mix graham cracker crumbs, ⅓ cup granulated sugar, and melted butter until the mixture resembles wet sand.
  3. Press the mixture evenly into the bottom of the pan. Bake for 10 minutes, then let cool slightly.
  4. In a large mixing bowl, beat softened cream cheese and 1 cup sugar until smooth and creamy (about 2–3 minutes).
  5. Add eggs one at a time, mixing well after each addition. Then mix in vanilla and almond extracts.
  6. Fold in ricotta cheese until fully incorporated. Gently stir in mini chocolate chips.
  7. Spread the cheesecake mixture evenly over the cooled crust.
  8. Bake for 35–40 minutes, until edges are set and the center jiggles slightly.
  9. Turn off the oven and leave the bars inside for 1 hour to cool gradually.
  10. Transfer to the refrigerator and chill for at least 4 hours or overnight.
  11. Lift bars out using parchment overhang. Dust with powdered sugar, slice, and serve.
