Description

Caramel Apple Cheesecake Bars are the perfect fall dessert, combining the creamy richness of cheesecake, the tartness of Granny Smith apples, and the sweetness of caramel. With a buttery graham cracker crust, a spiced apple topping, and a drizzle of homemade caramel sauce, these bars are sure to become your new favorite autumn treat.

Ingredients

Scale
  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1/4 tsp cinnamon
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3 medium Granny Smith apples, peeled and diced
  • 2 tbsp lemon juice
  • 1/4 cup brown sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 cup granulated sugar
  • 1/4 cup water
  • 1/2 cup heavy cream
  • 2 tbsp unsalted butter
  • 1/4 tsp salt
  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 cup unsalted butter, cold and cubed
  • 1/4 cup chopped pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2. Make the crust by mixing graham cracker crumbs, melted butter, granulated sugar, and cinnamon. Press the mixture into the bottom of the prepared pan. Bake for 10 minutes, then let it cool.
  3. To make the cheesecake layer, beat the softened cream cheese and sugar until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract. Pour this mixture over the cooled crust and spread it evenly.
  4. Prepare the apple layer by tossing the diced apples with lemon juice, brown sugar, cinnamon, and nutmeg. Spread this mixture evenly over the cheesecake layer.
  5. Create the streusel topping by mixing flour and brown sugar. Cut in the cold butter until the mixture becomes crumbly. Stir in chopped pecans, if using. Sprinkle the streusel over the apple layer.
  6. Bake the bars at 350°F (175°C) for 45-50 minutes, or until the streusel is golden brown and the cheesecake is set. Allow to cool completely at room temperature, then refrigerate for at least 2 hours.
  7. Make the caramel sauce by combining granulated sugar and water in a saucepan. Heat over medium heat until the sugar dissolves. Increase the heat to medium-high and cook without stirring until the mixture turns amber (about 8-10 minutes). Remove from heat and whisk in heavy cream, butter, and salt. Let it cool slightly.
  8. Once the bars have cooled, cut them into squares and drizzle with the homemade caramel sauce before serving.

Notes

  • For an extra-crispy crust, pre-bake it for 10 minutes to prevent sogginess.
  • Ensure the cream cheese is at room temperature to avoid lumps in the cheesecake mixture.
  • Granny Smith apples are ideal because of their tartness, but feel free to experiment with other apple varieties like Honeycrisp or Braeburn.
  • If you’re short on time, you can use store-bought caramel sauce, though homemade is preferred for the best flavor.
  • These bars can be made a day ahead and stored in the refrigerator for easy preparation ahead of gatherings.
