Description

Caramel Brownie Cheesecake is a rich and indulgent dessert featuring a fudgy brownie base, creamy cheesecake filling, and a luscious caramel swirl topping. Perfect for special occasions or when you crave a decadent treat.

Ingredients

Scale
  • 1 box brownie mix (plus eggs, oil, and water as required on package)
  • 24 oz (680 g) cream cheese, softened
  • 1 cup (200 g) granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/4 cup (60 ml) sour cream
  • 1/4 cup (60 ml) heavy cream
  • 1/2 cup (120 ml) caramel sauce (plus extra for topping)
  • 1 cup (240 ml) whipped cream (for decoration)
  • 1/4 cup (45 g) chocolate chips (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C). Prepare the brownie mix according to package instructions, pour into a greased 9-inch pan, and bake. Allow the brownie base to cool completely.
  2. Reduce oven temperature to 325°F (160°C). In a large bowl, beat softened cream cheese and sugar until smooth and creamy.
  3. Add vanilla extract, then mix in eggs one at a time, blending well after each addition.
  4. Stir in sour cream and heavy cream until the mixture is fully combined and smooth.
  5. Pour the cheesecake batter over the cooled brownie base and spread evenly.
  6. Drizzle caramel sauce over the top and use a knife or skewer to swirl it into the batter.
  7. Bake for 50–60 minutes, until edges are set and the center is slightly jiggly.
  8. Turn off the oven and let the cheesecake cool inside with the door slightly open.
  9. Refrigerate for at least 4 hours or overnight until fully set.
  10. Before serving, drizzle with additional caramel sauce and top with whipped cream and chocolate chips.

Notes

  • Ensure cream cheese is at room temperature for a smooth batter.
  • Avoid overmixing to prevent cracks in the cheesecake.
  • Cool gradually in the oven to minimize surface cracking.
  • Chill overnight for best texture and flavor.
  • Use a warm knife for clean slices when serving.
