Description

Caramelized Fig Upside Down Cake is a moist, buttery seasonal dessert featuring fresh figs baked in a rich brown sugar caramel topping over a tender orange-scented vanilla cake. Perfect for late summer and fall, this elegant upside-down cake is easy enough for everyday baking yet impressive enough for special occasions.

Ingredients

Scale
  • 8 fresh figs, halved
  • 4 tbsp unsalted butter, melted (for topping)
  • 1/2 cup packed light brown sugar (for topping)
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/4 cup whole milk
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • Zest of 1 orange

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch springform or cake pan thoroughly.
  2. Pour the melted butter into the prepared pan and sprinkle the brown sugar evenly over the butter.
  3. Arrange the halved fresh figs cut-side down in a decorative circular pattern over the brown sugar mixture.
  4. In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Mix in the sour cream, whole milk, vanilla extract, and orange zest until smooth.
  7. In a separate bowl, whisk together the flour, baking powder, and salt.
  8. Gradually fold the dry ingredients into the wet ingredients until just combined.
  9. Spread the batter evenly over the arranged figs and smooth the top.
  10. Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
  11. Cool the cake in the pan for about 10 minutes.
  12. Carefully invert the cake onto a serving plate and allow it to cool slightly before serving.

Notes

  • Use ripe but firm fresh figs for the best texture.
  • Do not overmix the batter to keep the cake tender.
  • Allow the cake to cool for about 10 minutes before inverting.
  • Fresh orange zest adds brightness and complements the caramelized figs.
  • Serve warm with whipped cream or vanilla ice cream.
  • Store leftovers covered in the refrigerator for up to 4 days.
  • Freeze individual slices for up to 3 months.
