Ingredients
Scale
- 1/2 cup coconut oil: adds richness and keeps the bread moist
- 1 cup cane sugar: provides sweetness and balances the spices
- 2 large eggs: helps bind the ingredients and create structure
- 2 teaspoons vanilla extract: enhances the overall flavor
- 1 cup crushed pineapple: adds moisture and natural sweetness
- 1 1/2 cups grated zucchini: creates a tender and moist crumb
- 1 3/4 cups all-purpose flour: provides the base structure for the loaf
- 1 teaspoon baking soda: helps the bread rise
- 1 teaspoon cinnamon: adds warm spice flavor
- 1 teaspoon ground cardamom: provides the signature floral aroma
- 1/4 teaspoon nutmeg: adds depth and warmth
- 1/2 teaspoon salt: enhances all flavors
- 1/2 cup pistachios: adds crunch and nutty flavor to the crumble
- 1/4 cup brown sugar: adds sweetness and caramel notes to the topping
- 1/4 cup all-purpose flour: helps form the crumble topping
- 4 tablespoons cold butter: creates a rich, crumbly texture
Instructions
- Preheat the oven to 350°F and prepare a standard loaf pan by greasing it or lining it with parchment paper.
- Mix coconut oil and cane sugar in a large bowl until combined. Add eggs and vanilla extract, then mix until smooth.
- Stir crushed pineapple and grated zucchini into the wet mixture until evenly incorporated.
- In a separate bowl, whisk together flour, baking soda, cinnamon, cardamom, nutmeg, and salt.
- Gradually fold the dry ingredients into the wet ingredients until just combined. Avoid overmixing to keep the bread tender.
- Prepare the pistachio crumble by combining pistachios, cardamom, flour, and brown sugar in a food processor. Add cold butter and pulse until a crumbly mixture forms.
- Pour half of the batter into the loaf pan and sprinkle half of the pistachio crumble over it.
- Add the remaining batter and cover with the remaining pistachio crumble topping.
- Bake for about 50 minutes or until a toothpick inserted in the center comes out clean.
- Cool the bread before slicing to allow the crumb to set properly.
Notes
- Use fresh zucchini for the best moisture and texture.
- Do not overmix the batter because it can make the bread dense.
- Freshly ground cardamom provides the strongest flavor and aroma.
- The bread can be stored in an airtight container at room temperature for 3 to 4 days.
- Freeze individual slices for longer storage and thaw before serving.
- Pistachios can be replaced with walnuts, almonds, or pecans if desired.
