Instructions

  1. Preheat the oven to 350°F and prepare a standard loaf pan by greasing it or lining it with parchment paper.
  2. Mix coconut oil and cane sugar in a large bowl until combined. Add eggs and vanilla extract, then mix until smooth.
  3. Stir crushed pineapple and grated zucchini into the wet mixture until evenly incorporated.
  4. In a separate bowl, whisk together flour, baking soda, cinnamon, cardamom, nutmeg, and salt.
  5. Gradually fold the dry ingredients into the wet ingredients until just combined. Avoid overmixing to keep the bread tender.
