Instructions
- Preheat the oven to 350°F (175°C). Coat a 9 x 5-inch loaf pan with nonstick cooking spray.
- In a medium bowl, stir together the flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg until evenly combined.
- In a large mixing bowl, beat the eggs and brown sugar with an electric mixer until smooth.
- Add the vegetable oil, maple syrup, and vanilla extract and mix until well blended.
- Add about half of the flour mixture and mix just until incorporated. Add the remaining flour mixture and mix only until combined.
- Using a wooden spoon or spatula, gently fold the grated zucchini, shredded carrot, and optional chopped walnuts into the batter.
- Pour the batter into the prepared loaf pan and spread it evenly.
- Bake for 45 to 50 minutes, or until a toothpick inserted into the center comes out clean or with only a few moist crumbs.
- Allow the bread to cool in the pan for 15 to 20 minutes, then remove it from the pan and cool completely before frosting.
- To make the frosting, beat the softened cream cheese and butter together until smooth and creamy.
- Add the powdered sugar and mix until incorporated. Add the milk, lemon juice, and vanilla extract and beat until smooth and spreadable.
- Spread the cream cheese frosting over the completely cooled loaf and immediately sprinkle with optional chopped walnuts. Slice and serve.
Notes
- Do not overmix the batter after adding the flour, as this can make the bread dense or tough.
- There is no need to peel the zucchini before grating it.
- If the grated zucchini is extremely watery, lightly blot excess moisture rather than squeezing it completely dry.
- Check the loaf near the 45-minute mark because oven temperatures and loaf pans can vary.
- Allow the bread to cool completely before adding cream cheese frosting to prevent the frosting from melting.
- The walnuts can be omitted or replaced with chopped pecans.
