- 1/2 teaspoon ground allspice
- 1 teaspoon kosher salt
- Cream cheese frosting, enough to frost one 9×13-inch cake or two 8-inch cakes
- Extra chopped pistachios for garnish, optional
Instructions
- Preheat the oven to 325°F. Coat one 9×13-inch baking pan or two 8-inch round cake pans with nonstick baking spray.
- Shred the zucchini, then press it through a fine-mesh strainer, cheesecloth, or a clean kitchen towel to remove excess moisture. Set aside.
- In a large mixing bowl, combine the eggs, canola oil, brown sugar, granulated sugar, vanilla extract, and orange zest. Mix on high for about 3 minutes, until smooth and well blended.
- In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, allspice, and kosher salt.
- Add the dry ingredients to the wet ingredients and mix only until just combined. Do not overmix.
- Fold in the shredded carrots, drained zucchini, and chopped pistachios until evenly distributed.
- Pour the batter into the prepared pan or divide evenly between the two round pans. Smooth the top.
- Bake for 35 to 45 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Allow the cake to cool completely before frosting.
- Spread cream cheese frosting over the cooled cake and garnish with additional chopped pistachios if desired.
