Description

This cauliflower soup is a creamy, healthy, and comforting plant-based dish made with simple ingredients. It delivers a rich, velvety texture without dairy, making it perfect for a nourishing lunch or light dinner.


Ingredients

  • 1 large cauliflower (about 700g), cut into florets
  • 1 medium onion (150g), finely chopped
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • 4 cups (1 liter) vegetable broth
  • 1 medium potato (200g), peeled and diced
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg (optional)
  • 1 tablespoon lemon juice (optional)


Instructions

  1. Wash and cut the cauliflower into small florets. Peel and dice the potato, then finely chop the onion and garlic.
  2. Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté for 3–4 minutes until soft and translucent.
  3. Add the minced garlic and cook for 1 minute until fragrant.
  4. Stir in the cauliflower florets and diced potato, mixing well with the sautéed aromatics.
  5. Pour in the vegetable broth, ensuring the vegetables are fully covered. Bring to a boil.
  6. Reduce heat and simmer for 15–20 minutes, or until the cauliflower and potato are fork-tender.
  7. Remove from heat and blend the soup using an immersion blender until smooth and creamy.
  8. Return to low heat, season with salt, pepper, and nutmeg, and stir well.
  9. Add lemon juice if desired, adjust seasoning, and serve warm.

  • For extra flavor, roast the cauliflower before adding it to the soup.
  • Blend thoroughly for the smoothest and creamiest texture.
  • Add more broth or water if the soup becomes too thick.
