- 1 large cauliflower (about 700g), cut into florets
- 1 medium onion (150g), finely chopped
- 3 garlic cloves, minced
- 2 tablespoons olive oil
- 4 cups (1 liter) vegetable broth
- 1 medium potato (200g), peeled and diced
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon black pepper
- 1/4 teaspoon ground nutmeg (optional)
- 1 tablespoon lemon juice (optional)
Instructions
- Wash and cut the cauliflower into small florets. Peel and dice the potato, then finely chop the onion and garlic.
- Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté for 3–4 minutes until soft and translucent.
- Add the minced garlic and cook for 1 minute until fragrant.
- Stir in the cauliflower florets and diced potato, mixing well with the sautéed aromatics.
- Pour in the vegetable broth, ensuring the vegetables are fully covered. Bring to a boil.
- Reduce heat and simmer for 15–20 minutes, or until the cauliflower and potato are fork-tender.
- Remove from heat and blend the soup using an immersion blender until smooth and creamy.
- Return to low heat, season with salt, pepper, and nutmeg, and stir well.
- Add lemon juice if desired, adjust seasoning, and serve warm.
Notes
- For extra flavor, roast the cauliflower before adding it to the soup.
- Blend thoroughly for the smoothest and creamiest texture.
- Add more broth or water if the soup becomes too thick.
- Store leftovers in the fridge for up to 4 days or freeze for up to 3 months.
