Description
Cheeseburger Quesadillas combine the best of two comfort food favorites—cheeseburgers and quesadillas—into one easy, cheesy, and family-friendly meal. Juicy ground beef, melty cheddar, pickles, and a creamy burger sauce are folded into crispy flour tortillas, ready in just 30 minutes.
Ingredients
Scale
- 1/3 cup mayonnaise: base for the special sauce
- 1/3 cup ketchup: adds sweetness and tang
- 2 tablespoons pickle juice: adds zing and enhances flavor
- 1 tablespoon yellow mustard: adds brightness and classic burger flavor
- 1 teaspoon Worcestershire sauce: deepens the umami in the sauce
- 1/2 teaspoon salt: enhances flavor
- 1/4 teaspoon black pepper: adds mild heat
- 1 pound ground beef (80/20 preferred): provides savory burger flavor
- 4 (8-inch) flour tortillas: crispy exterior for the quesadillas
- 4 cups shredded cheddar cheese: provides rich, melty texture
- 24 dill pickle chips (optional): adds tangy crunch
- 1 head iceberg lettuce, cored and cut into 4 wedges: for wedge salad
- 8 cherry tomatoes, quartered: adds freshness to the salad
- 1 shallot, finely chopped: adds a mild onion flavor to the salad
Instructions
- In a small bowl, mix mayonnaise, ketchup, pickle juice, mustard, Worcestershire sauce, salt, and pepper. Stir until combined and set aside.
- In a large skillet over medium-high heat, cook the ground beef until browned and fully cooked, about 6–8 minutes. Drain the excess grease.
- Wipe out the skillet, spray with nonstick spray, and return to medium heat. Place one tortilla in the skillet.
- On one half of the tortilla, add 1/2 cup shredded cheese, 1/4 of the cooked beef, and 6 dill pickle chips (if using). Top the other half with another 1/2 cup cheese, then fold the tortilla in half.
- Cook the quesadilla until golden brown and the cheese is melted, about 2 minutes per side. Transfer to a plate and keep warm. Repeat with remaining tortillas, beef, cheese, and pickles.
- Cut each quesadilla in half and place two halves on each plate.
- To make the wedge salad, place one lettuce wedge on each plate, top with cherry tomatoes and chopped shallots, and drizzle with the reserved sauce. Serve with extra sauce on the side.
Notes
- Use 80/20 ground beef for maximum flavor and juiciness.
- Drain beef well to avoid soggy tortillas.
- Double the special sauce to use for burgers, sandwiches, or dipping later in the week.
- Quesadillas are best served hot off the skillet but can be reheated in a toaster oven or skillet.
- For a spicier twist, add sliced jalapeños or use pepper jack cheese.
