Description

Crispy on the outside and cheesy on the inside, these easy cauliflower bites are a quick, low-carb snack or appetizer perfect for beginner cooks.


Ingredients

  • 1 medium head cauliflower or 12 oz bag of riced cauliflower
  • 3/4 cup sharp cheddar cheese, shredded
  • 3/4 cup mozzarella cheese, shredded
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried parsley
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 1/2 cup ranch dressing (for dipping)
  • 1/4 cup buffalo sauce (for dipping)


Instructions

  1. Chop the cauliflower into small pieces and steam for about 10 minutes until fork tender. Drain well.
  2. In a large bowl, mix the cooked cauliflower with cheddar, mozzarella, breadcrumbs, egg, and seasonings until fully combined.
  3. Lightly wet or oil your hands and form the mixture into 12 small round patties.
  4. Heat olive oil in a skillet over medium-high heat and cook the patties for 5 minutes on each side until golden brown. Alternatively, bake or air fry at 400°F for 15 minutes, flipping halfway through.
  5. Mix ranch and buffalo sauce together and serve as a dipping sauce alongside the hot cauliflower bites.

  • Oil or wet your hands when shaping patties to prevent sticking.
  • Only flip once while cooking to maintain structure and crispiness.
