- 1 medium head cauliflower or 12 oz bag of riced cauliflower
- 3/4 cup sharp cheddar cheese, shredded
- 3/4 cup mozzarella cheese, shredded
- 1/2 cup breadcrumbs
- 1 egg
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried parsley
- 1 tsp smoked paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 1/2 cup ranch dressing (for dipping)
- 1/4 cup buffalo sauce (for dipping)
Instructions
- Chop the cauliflower into small pieces and steam for about 10 minutes until fork tender. Drain well.
- In a large bowl, mix the cooked cauliflower with cheddar, mozzarella, breadcrumbs, egg, and seasonings until fully combined.
- Lightly wet or oil your hands and form the mixture into 12 small round patties.
- Heat olive oil in a skillet over medium-high heat and cook the patties for 5 minutes on each side until golden brown. Alternatively, bake or air fry at 400°F for 15 minutes, flipping halfway through.
- Mix ranch and buffalo sauce together and serve as a dipping sauce alongside the hot cauliflower bites.
Notes
- Drain cauliflower well to avoid soggy bites.
- Oil or wet your hands when shaping patties to prevent sticking.
- Only flip once while cooking to maintain structure and crispiness.
- Store leftovers in an airtight container for up to 5 days and reheat in a skillet or air fryer.
