Ingredients
Scale
- 1 pound ground beef
- 1 (10.5-ounce) can condensed cream of mushroom soup
- 1 (14.5-ounce) can diced tomatoes, undrained
- 1 cup uncooked long-grain white rice
- 2 cups shredded mozzarella cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Brown the ground beef in a large skillet over medium-high heat until fully cooked. Drain any excess grease.
- Stir the condensed cream of mushroom soup into the cooked beef until well combined.
- Add the diced tomatoes with their juices and mix thoroughly.
- Stir in the uncooked rice until evenly coated.
- Cover and simmer over low heat for 15 to 20 minutes, stirring occasionally, until the rice is tender. Add a splash of water or beef broth if needed.
- Preheat the broiler while the rice finishes cooking.
- Transfer the beef and rice mixture to a lightly greased casserole dish.
- Evenly sprinkle the shredded mozzarella cheese over the top.
- Broil for 2 to 4 minutes, or until the cheese is melted, bubbly, and lightly golden.
- Season with salt and black pepper to taste. Let the casserole rest for 5 minutes before serving.
Notes
- Drain the beef well to avoid excess grease.
- Freshly shredded cheese melts more smoothly than pre-shredded cheese.
- Add vegetables such as mushrooms, peas, corn, or bell peppers for extra nutrition.
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
- Freeze for up to 3 months and thaw overnight before reheating.
- Use cheddar, Monterey Jack, or Colby Jack cheese for different flavor variations.
