- 14 ounces Polska kielbasa, sliced diagonally
- 1 small onion, diced
- 1 small bell pepper, diced
- 2 cloves garlic, minced

- 1 cup uncooked long-grain white rice
- 2 cups low-sodium chicken broth
- 2 cups broccoli florets, cut into bite-size pieces
- 2 cups shredded cheddar cheese, divided
Instructions
- Heat the olive oil in a large skillet with a lid over medium-high heat.
- Add the sliced kielbasa and cook for 3 to 4 minutes per side until browned. Remove and set aside.
- Add the diced onion and bell pepper to the skillet and sauté until the onion becomes translucent, scraping up the browned bits from the pan.
- Stir in the minced garlic, salt, and black pepper, and cook for 1 minute until fragrant.
- Add the uncooked rice and stir continuously for 1 to 2 minutes to lightly toast it.
- Pour in the chicken broth and bring the mixture to a boil.
- Reduce the heat to low, cover the skillet, and cook for 10 minutes without stirring.
- Place the broccoli florets on top of the rice, cover again, and cook for another 10 to 15 minutes until the rice is tender and the broccoli is crisp-tender.
- Return the browned kielbasa to the skillet and stir in 1 cup of the shredded cheddar cheese until melted.
- Sprinkle the remaining 1 cup of cheese over the top, cover the skillet, and let it sit for 2 to 3 minutes until the cheese is fully melted. Serve immediately.
