Description

Cheesy Zucchini Breadsticks offer a delicious low-carb, keto-friendly alternative to traditional cheesy bread. Combining zucchini, mozzarella, parmesan, and egg, they create a savory, satisfying dish that’s perfect as a snack or side dish. With a crispy crust and melted cheese on top, they make for the ideal comfort food without the carb overload.

Ingredients

Scale
  • 4 cups Grated Zucchini
  • 1/2 cup Mozzarella Cheese
  • 1/3 cup Parmesan Cheese
  • 1 Egg
  • 1 tsp Garlic Parsley Salt
  • 1 cup Grated Cheese of Choice (for topping)

Instructions

  1. Grate the zucchini and squeeze out as much moisture as possible using a clean towel or cheesecloth.
  2. In a large bowl, combine the grated zucchini, mozzarella cheese, parmesan cheese, egg, and garlic parsley salt. Stir well.
  3. Spread the zucchini mixture evenly on a lined baking sheet, pressing it into a thin layer about half an inch thick.
  4. Bake the mixture at 425°F for 15 minutes or until the crust turns golden and crispy.
  5. Sprinkle the grated cheese of your choice on top of the baked crust and return to the oven for an additional 2-5 minutes, just until the cheese melts and becomes golden brown.
  6. Remove from the oven, slice, and serve while hot for the best texture and flavor.

Notes

  • Make sure to squeeze out all excess moisture from the zucchini for a crispier crust.
  • If you prefer, you can top the breadsticks with your favorite cheese like mozzarella, cheddar, or a blend of both.
  • These breadsticks are best enjoyed fresh out of the oven but can be stored in an airtight container for up to 3 days in the refrigerator.
