This easy Cheesy Zucchini Casserole combines tender zucchini with sour cream, heavy cream, and melted cheese for a creamy, comforting side dish or simple vegetarian meal.

- 2 medium zucchini, chopped into bite-sized pieces
- 1/3 cup sour cream
- 1/3 cup heavy cream
- 2/3 cup grated cheese, such as cheddar, mozzarella, Parmesan, Gruyère, or a combination
Instructions
- Preheat the oven to 350°F (180°C) and prepare an oven-safe casserole or baking dish.
- Wash the zucchini, trim the ends, and chop into evenly sized bite-sized pieces.
- Place the chopped zucchini in the baking dish.
- Add the sour cream and heavy cream, then stir until the zucchini is evenly coated.
- Add 1/3 cup of the grated cheese and stir it through the zucchini mixture.
- Sprinkle the remaining 1/3 cup grated cheese evenly over the top.
- Bake for 20 to 25 minutes, or until the zucchini is tender and the cheese is melted and golden.
- Remove from the oven and allow the casserole to rest for several minutes before serving.
