Description

This easy Cheesy Zucchini Casserole combines tender zucchini with sour cream, heavy cream, and melted cheese for a creamy, comforting side dish or simple vegetarian meal.


Ingredients

  • 2 medium zucchini, chopped into bite-sized pieces
  • 1/3 cup sour cream
  • 1/3 cup heavy cream
  • 2/3 cup grated cheese, such as cheddar, mozzarella, Parmesan, Gruyère, or a combination


Instructions

  1. Preheat the oven to 350°F (180°C) and prepare an oven-safe casserole or baking dish.
  2. Wash the zucchini, trim the ends, and chop into evenly sized bite-sized pieces.
  3. Place the chopped zucchini in the baking dish.
  4. Add the sour cream and heavy cream, then stir until the zucchini is evenly coated.
  5. Add 1/3 cup of the grated cheese and stir it through the zucchini mixture.
  6. Sprinkle the remaining 1/3 cup grated cheese evenly over the top.
  7. Bake for 20 to 25 minutes, or until the zucchini is tender and the cheese is melted and golden.
  8. Remove from the oven and allow the casserole to rest for several minutes before serving.
