  • 2 teaspoons vanilla extract
  • 1 egg, beaten
  • 2 tablespoons coarse sugar or sugar crystals


Instructions

  1. In a large bowl, combine the flour and salt. Cut the cold butter into the flour mixture until pea-sized crumbs form.
  2. Slowly add the ice cold water and mix until a shaggy dough forms.
  3. Divide the dough into two discs, wrap in plastic wrap, and chill for at least 2 hours.
  4. Preheat the oven to 425°F.
  5. Roll out the first dough disc and place it into a 9-inch pie dish.
  6. In a separate bowl, combine apples, cherries, brown sugar, cornstarch, cinnamon, and vanilla extract.
  7. Spoon the fruit filling into the prepared pie crust.
  8. Roll out the second dough disc and cut into strips to create a lattice top.
  9. Arrange the lattice over the filling, trim excess dough, and crimp the edges.
  10. Brush the crust with beaten egg and sprinkle with coarse sugar.
  11. Bake the pie for 15 minutes at 425°F, then reduce the temperature to 350°F and bake for 50 to 55 minutes until golden brown and bubbling.
  12. Allow the pie to cool for at least 1 to 2 hours before slicing and serving.
