Description

Soft and chewy brown sugar cookies with rich caramel flavor, lightly crisp edges, tender centers, and crinkled sugar-coated tops. Made with melted butter and simple pantry ingredients, these easy cookies require no electric mixer.

  • 1 teaspoon baking soda
  • 1 1/2 teaspoons cornstarch
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 3/4 cup (170g) unsalted butter, melted and slightly cooled
  • 1 1/4 cups (250g) packed light or dark brown sugar
  • 1 large egg, at room temperature
  • 2 teaspoons pure vanilla extract
  • 1/3 cup (67g) granulated sugar, for rolling


Instructions

  1. Whisk the flour, baking soda, cornstarch, cinnamon, and salt together in a large bowl.
  2. In a separate bowl, whisk the melted and slightly cooled butter with the brown sugar until smooth and no large sugar lumps remain.
  3. Whisk the egg and vanilla extract into the butter mixture until fully combined.
  4. Pour the wet ingredients into the dry ingredients and stir with a silicone spatula or wooden spoon until a thick, soft dough forms.
  5. Cover the dough and refrigerate for at least 3 to 4 hours or for up to 3 days.
  6. If the dough has chilled for longer than 4 hours, let it stand at room temperature for about 15 minutes before shaping.
  7. Preheat the oven to 325°F (163°C). Line baking sheets with parchment paper or silicone baking mats.
  8. Place the granulated sugar in a small bowl. Scoop approximately 1 1/2 tablespoons of dough per cookie and roll into balls.
  9. Roll each dough ball in granulated sugar and arrange them about 3 inches apart on the prepared baking sheets.
  10. Bake for 14 to 16 minutes, until the edges are set and small cracks appear on top. The centers should still look very soft.
  11. Cool the cookies on the baking sheet for 10 minutes, then transfer them to a wire rack to cool completely.

Notes

  • Chilling the dough for at least 3 to 4 hours is essential because the recipe uses melted butter and warm dough can spread excessively.
  • Let the melted butter cool for about 5 to 10 minutes before combining it with the egg.
  • Light or dark brown sugar can be used. Dark brown sugar provides a stronger molasses flavor, while a combination of both creates a balanced caramel taste.
  • For a stronger cinnamon flavor, increase the cinnamon to 1 teaspoon, or omit it for a more pronounced brown sugar flavor.
  • Do not overbake. The centers should still appear soft when the cookies are removed from the oven.
  • For brown butter cookies, replace the melted butter with browned butter and add 2 tablespoons of water or milk to replace moisture lost during browning.
