Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 medium sweet potatoes, peeled and cubed
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • Salt and black pepper, to taste
  • 1 cup broccoli florets
  • 1 tablespoon chopped fresh parsley (for garnish)
  • Lemon wedges (optional, for serving)


Instructions

  1. Roast the Sweet Potatoes: Preheat the oven to 400°F (200°C). Toss the sweet potato cubes with olive oil, paprika, garlic powder, cumin, salt, and pepper until evenly coated. Spread them on a baking sheet and roast for 20–25 minutes, flipping halfway through, until tender and golden on the edges.
  2. Cook the Chicken: While the potatoes roast, season the chicken breasts with salt, pepper, and a little paprika. Heat olive oil in a skillet over medium heat. Sear the chicken for 6–7 minutes per side until golden brown and fully cooked (internal temp should be 165°F/74°C). Let the chicken rest before slicing.
  3. Steam the Broccoli: Steam the broccoli florets in a steamer basket for about 5 minutes, or microwave them with a splash of water for 2–3 minutes until bright green and tender but not mushy.
  4. Assemble the Bowls: Divide the roasted sweet potatoes, steamed broccoli, and sliced chicken into two bowls. Garnish with chopped parsley and serve with lemon wedges for a zesty touch.

Notes

  • You can add avocado, feta, or a handful of mixed greens for extra texture and flavor. For a spicy version, add chili flakes or drizzle with hot sauce. This recipe is easily doubled for more servings, and leftovers reheat well for lunches. Keep sauces on the side if storing.
