- 4-5 pounds bone-in chicken thighs (remove the skin)
- 1/3 cup olive oil
- 1/2 cup orange juice
- 1/4 cup lime juice
- 1 small yellow onion, chopped
- 6 cloves garlic, minced
- 2 ounces achiote paste
- 1 tablespoon ground coriander
- 1 tablespoon ground cumin
- 1 tablespoon kosher salt
- 2 teaspoons smoked paprika
- 2 teaspoons dried oregano
- 1 teaspoon black pepper
- 1 teaspoon chipotle chile pepper
Instructions
- Whisk together all marinade ingredients in a large bowl or resealable plastic bag.
- Add the chicken and ensure it is evenly coated with the marinade. Refrigerate for 4-24 hours.
- Remove chicken from the refrigerator 30 minutes before cooking to bring it to room temperature.
- For grilling: Preheat the grill to medium-high heat (425-450°F). Clean and grease the grill grates.
- Grill the chicken for 5-7 minutes per side, or until the internal temperature reaches 175°F for bone-in thighs. Rest for 5 minutes before serving.
- For roasting: Preheat the oven to 400°F. Line a baking sheet with foil and add the chicken in a single layer. Roast for 25-35 minutes until the chicken reaches 175°F internally. Rest for 5 minutes before serving.
Notes
- Marinate the chicken for at least 12 hours for maximum flavor.
- If using chicken breasts, marinate for no longer than 12 hours to prevent them from becoming mushy.
- Ensure the chicken reaches the correct internal temperature (165°F for breasts, 175°F for dark meat) to avoid overcooking.
- If you don’t have achiote paste, you can substitute it with a blend of paprika, vinegar, oregano, and other spices.
