This chickpea curry is a creamy, flavorful, and easy one-pot vegan dish made with hearty chickpeas, coconut milk, tomatoes, and aromatic spices. Perfect for a quick weeknight dinner, it delivers rich, comforting flavors while being healthy and satisfying.

- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 teaspoons curry powder
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 can (14 oz / 400 g) crushed tomatoes
- 2 cans (15 oz / 425 g each) chickpeas, drained and rinsed
- 1 cup (240 ml) vegetable broth
- 1 can (14 oz / 400 ml) coconut milk
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon black pepper
- 2 tablespoons fresh cilantro, chopped
- 1 tablespoon lemon juice
Instructions
- Heat olive oil in a large pan over medium heat. Add the chopped onion and sauté for about 5 minutes until soft and translucent.
- Add minced garlic and grated ginger, and cook for 1 minute until fragrant.
- Stir in curry powder, turmeric, cumin, and paprika. Toast the spices for about 30 seconds.
- Pour in the crushed tomatoes and mix well. Let it simmer for 5 minutes to develop flavor.
- Add the chickpeas and vegetable broth. Stir and let simmer for 10 minutes.
- Pour in the coconut milk, mix well, and reduce heat. Simmer for another 10–15 minutes until creamy.
- Season with salt and black pepper. Add lemon juice and stir.
- Garnish with fresh cilantro and serve warm with rice or naan.
Notes
- For a thicker curry, simmer uncovered for a few extra minutes.
- You can mash some chickpeas to naturally thicken the sauce.
- Add spinach or sweet potatoes for extra nutrition and variation.
- Adjust spice levels by adding chili flakes or fresh chili.
- This curry tastes even better the next day as flavors deepen.
