Description

This chipotle aioli is a creamy, smoky, and slightly spicy sauce made with mayonnaise, chipotle peppers in adobo, garlic, and fresh lime juice. It’s quick to prepare and perfect as a dip, spread, or drizzle for fries, sandwiches, tacos, and grilled dishes.

  • 1 tablespoon fresh lime juice: balances richness with acidity
  • 1/8 teaspoon salt (or to taste): enhances overall flavor
  • 1/8 teaspoon smoked paprika (optional): adds extra smoky warmth


Instructions

  1. Finely mince 1 to 2 chipotle peppers and set aside, adjusting the amount based on your preferred spice level.
  2. In a medium bowl, combine the mayonnaise and minced chipotle peppers along with 1 teaspoon of adobo sauce.
  3. Add the minced garlic and fresh lime juice to the mixture.
  4. Sprinkle in the salt and optional smoked paprika.
  5. Stir everything together until the chipotle aioli is smooth and evenly combined.
  6. Taste and adjust seasoning by adding more lime juice for brightness or more chipotle for heat.
  7. Cover and refrigerate for at least 15–30 minutes to allow the flavors to meld.
  8. Stir before serving and enjoy as a dip, spread, or sauce.

  • Start with one chipotle pepper and add more gradually to control the heat level.
  • Use fresh lime juice for the best flavor instead of bottled juice.
