Description

This Chocolate Chip Cookie Ice Cream Sandwich recipe combines chewy chocolate chip cookies with creamy vanilla ice cream and fun toppings for the ultimate frozen dessert. Easy to customize and perfect for summer parties, birthdays, or make-ahead treats, these homemade ice cream sandwiches are rich, refreshing, and family-friendly.

Ingredients

Scale
  • 12 chocolate chip cookies
  • 2 cups vanilla ice cream, slightly softened
  • 1/4 cup mini chocolate chips
  • 1/4 cup rainbow sprinkles
  • 1/4 cup crushed chocolate cookies
  • 2 tablespoons chopped almonds or walnuts
  • 2 tablespoons coconut flakes

Instructions

  1. Place the chocolate chip cookies on a baking sheet and freeze them for 10 minutes until chilled.
  2. Line a tray or baking sheet with parchment paper and prepare small bowls with the toppings.
  3. Turn one cookie upside down and scoop about 1/3 cup of softened vanilla ice cream onto the center.
  4. Place another cookie on top and gently press until the ice cream spreads evenly to the edges.
  5. Use a spatula or butter knife to smooth the sides of the ice cream if needed.
  6. Roll the edges of the sandwich into mini chocolate chips, sprinkles, crushed cookies, nuts, or coconut flakes.
  7. Place the finished ice cream sandwiches onto the prepared tray and freeze for at least 20 minutes until firm.
  8. Wrap each sandwich individually in parchment paper or plastic wrap and store in the freezer until ready to serve.

Notes

  • Freeze the cookies before assembling to prevent the ice cream from melting too quickly.
  • Allow the ice cream to soften slightly for easier scooping and spreading.
  • Use thicker cookies for sturdier ice cream sandwiches.
  • Store individually wrapped sandwiches in an airtight container for up to 1 month.
  • Let the sandwiches sit at room temperature for 2 to 3 minutes before eating for the best texture.
