Instructions
- Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans.
- In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla extract.
- Alternate adding dry ingredients and buttermilk into the wet mixture. Mix until just combined, then stir in hot water until smooth.
- Divide batter between pans and bake for 25–30 minutes. Cool completely.
- Heat cream for mousse until simmering, pour over chocolate, let sit, then stir until smooth. Cool to room temperature.
- Whip remaining cream with powdered sugar and vanilla until stiff peaks form. Fold in cooled chocolate mixture and chill for 1 hour.
- Heat cream for ganache and pour over chopped chocolate. Stir until smooth and glossy.
- Place one cake layer on a plate, spread mousse evenly, then top with the second layer.
- Pour ganache over the cake, letting it drip down the sides. Refrigerate for at least 1 hour before serving.
