Instructions

  1. In a large mixing bowl, combine the chopped strawberries, Greek yogurt, honey, and vanilla extract until evenly mixed.
  2. Line a baking sheet or large plate with parchment paper.
  3. Scoop about 2 tablespoons of the yogurt mixture onto the prepared baking sheet to form approximately 10 clusters.
  4. Freeze the clusters for 1 to 2 hours, or until completely firm.
  5. In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil.
  6. Microwave in 20-second intervals, stirring between each interval, until the chocolate is fully melted and smooth.
  7. Remove a few frozen clusters from the freezer at a time.
  8. Using a spoon, coat each cluster completely with the melted chocolate.
  9. Place the coated clusters back onto the parchment-lined baking sheet.
  10. Sprinkle with flaky sea salt if desired.
  11. Freeze for an additional 5 to 10 minutes until the chocolate hardens.
  12. Serve immediately or store in an airtight container in the freezer.
