Instructions
- Preheat the oven to 350°F (175°C) and lightly grease two baking sheets.
- Grate the fresh zucchini and measure 1 3/4 cups. Set aside.
- In a large mixing bowl, beat the butter-flavored shortening, white sugar, and brown sugar with an electric mixer until smooth and well combined.
- Add the egg and vanilla extract, then beat until fully incorporated.
- In a separate bowl, whisk together the all-purpose flour, unsweetened cocoa powder, baking soda, and salt.
- Gradually stir the dry ingredients into the shortening mixture until a chocolate cookie dough forms.
- Fold in the grated zucchini just until evenly distributed. Avoid overmixing the dough.
- Drop rounded spoonfuls of dough onto the prepared baking sheets, leaving space between each cookie.
- Bake for 8 to 10 minutes, or until the edges are set and the centers remain soft.
- Let the Chocolate Zucchini Cookies cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely.
