Description

  • 1/2 cup white sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease two baking sheets.
  2. Grate the fresh zucchini and measure 1 3/4 cups. Set aside.
  3. In a large mixing bowl, beat the butter-flavored shortening, white sugar, and brown sugar with an electric mixer until smooth and well combined.
  4. Add the egg and vanilla extract, then beat until fully incorporated.
  5. In a separate bowl, whisk together the all-purpose flour, unsweetened cocoa powder, baking soda, and salt.
  6. Gradually stir the dry ingredients into the shortening mixture until a chocolate cookie dough forms.
  7. Fold in the grated zucchini just until evenly distributed. Avoid overmixing the dough.
  8. Drop rounded spoonfuls of dough onto the prepared baking sheets, leaving space between each cookie.
  9. Bake for 8 to 10 minutes, or until the edges are set and the centers remain soft.
  10. Let the Chocolate Zucchini Cookies cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely.
