Description
The Chopped Chicken Caesar Salad Wrap combines juicy chicken, crispy bacon, fresh romaine lettuce, and creamy Caesar dressing all wrapped in a soft tortilla. It’s a quick and satisfying meal that’s perfect for lunch, dinner, or meal prepping.
Ingredients
Scale
- 1 Chicken Breast
- 1/2 teaspoon Kosher Salt
- 1/4 teaspoon Cracked Black Pepper
- 1 tablespoon Olive Oil
- 1 Burrito-Size Tortilla
- 1 Head Romaine Lettuce
- 4 Canadian Bacon Strips
- 4 tablespoons Store-bought Caesar Dressing
- 1/4 cup Freshly Grated Parmesan Cheese
Instructions
- Heat 1 tablespoon of vegetable oil in a skillet over medium-high heat. Add the bacon strips and cook for 2-4 minutes on each side until crispy. Remove the bacon and chop it into bite-sized pieces. Set aside.
- Preheat the oven to 400°F (200°C). Season both sides of the chicken breasts with salt and pepper. In an oven-safe skillet, heat 1 tablespoon of olive oil over medium-high heat. Sear the chicken for 2-3 minutes per side until golden brown, then transfer the skillet to the oven. Roast for 9-12 minutes, or until the internal temperature reaches 165°F (75°C). Let the chicken rest for 5 minutes, then slice it into thin strips.
- Rinse and dry the romaine lettuce, then chop it into bite-sized pieces. On a large cutting board, combine the lettuce, sliced chicken, chopped bacon, Caesar dressing, and freshly grated Parmesan. Use a large knife to chop and mix everything together until well-combined.
- Lay the tortilla flat and add the salad mixture down the center. Fold in the sides of the tortilla and tightly roll it up into a wrap.
- Heat a clean skillet over medium heat and drizzle a small amount of olive oil or spray with cooking spray. Place the wrap seam-side down in the skillet and cook for 1-2 minutes on each side, pressing down gently with a spatula, until golden brown and crispy.
Notes
- If you’re meal prepping, store the dressing and lettuce separately to prevent sogginess.
- Wrap the tortilla tightly to keep the filling in place. Wrapping it in foil also helps it hold its shape when reheating.
- Use fresh, dry lettuce to prevent the wrap from becoming soggy.
- Feel free to swap the chicken for grilled turkey, rotisserie chicken, or tofu for a vegetarian version.
