Description
Christmas Pinwheel Cookies are festive sugar cookies featuring beautiful red, white, and green spirals, a buttery vanilla flavor, and colorful sprinkle-coated edges. These homemade holiday cookies are perfect for Christmas parties, cookie exchanges, dessert platters, and edible gifts. Prepare the colorful dough, roll the layers into a spiral, slice into rounds, and bake until lightly crisp around the edges and tender in the center.
Ingredients
Scale
- 3 cups all-purpose flour (approximately 375 g)
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened (227 g)
- 1 1/4 cups granulated sugar (250 g)
- 1 large egg, at room temperature
- 2 teaspoons vanilla extract
- Red gel food coloring, as needed
- Green gel food coloring, as needed
- 1 cup Christmas sprinkles, for coating
- 1 tablespoon light corn syrup mixed with a little water, optional
Instructions
- Whisk together the flour, baking powder, and salt in a medium bowl. Set aside.
- Beat the softened butter and granulated sugar in a large mixing bowl for 2–3 minutes, until light and fluffy.
- Add the egg and vanilla extract. Mix until fully incorporated, scraping down the sides of the bowl as needed.
- Gradually add the dry ingredients with the mixer on low speed. Mix just until combined, avoiding overmixing.
- Divide the dough into three equal portions. Leave one portion plain, color one red, and color the other green using gel food coloring.
- Shape each portion into a disc, wrap tightly, and refrigerate for at least 45 minutes, until firm.
- Roll each portion between sheets of parchment paper into a rectangle approximately 6–6.5 inches wide and 13 inches long.
- Stack the rectangles with green on the bottom, plain dough in the middle, and red on top. Align the edges carefully.
- Roll the layered dough lengthwise into a tight spiral log, using the parchment paper to help guide the dough and prevent gaps.
- For a sprinkle coating, brush the outside of the log with a thin layer of diluted corn syrup. Roll it in Christmas sprinkles until evenly coated.
- Wrap the dough log and refrigerate for another 45 minutes, or until firm enough to slice neatly.
- Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
- Slice the chilled log into rounds slightly thinner than 1/2 inch. Arrange them on the prepared baking sheets, leaving space between cookies.
- Bake for approximately 13–15 minutes, until the cookies are lightly puffed and the edges are just set.
- Let the cookies cool on the baking sheets before transferring them to a wire rack. Serve once completely cooled.
Notes
- Use gel food coloring for vibrant red and green layers without adding excess liquid.
- Measure flour carefully to avoid dry, crumbly dough.
- Do not overmix after adding the flour, as this can make the cookies tough.
- Chill the dough before rolling and chill the assembled log before slicing to help preserve the spiral shape.
- Use a sharp knife to create clean, even slices.
- The sprinkle coating is optional. Sanding sugar or sparkling sugar can also be used.
- Keep the dough cool while working. If it becomes too soft, return it to the refrigerator.
- Baking times may vary slightly depending on cookie thickness and oven performance.
- Store cooled cookies in an airtight container at room temperature for 4–5 days.
- Freeze the wrapped dough log or baked cookies for up to 3 months for convenient make-ahead baking.
- Thaw frozen dough in the refrigerator before slicing and baking.
