Description

This Christmas Red Velvet Poke Cake is a festive and easy holiday dessert made with soft red velvet cake, a rich white chocolate and sweetened condensed milk filling, and creamy cream cheese frosting. Decorated with Christmas sprinkles and white chocolate curls, this beautiful cake is perfect for Christmas dinner, holiday parties, and family gatherings. Prepare it ahead of time and serve chilled for a deliciously moist and creamy dessert.

Ingredients

Scale
  • 1 box (15.25 oz) red velvet cake mix
  • 1 1/4 cups water
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 can (14 oz) sweetened condensed milk
  • 1 cup white chocolate chips, melted
  • 1 serving cream cheese frosting (store-bought or homemade)
  • 1/4 cup Christmas sprinkles
  • 2 tablespoons white chocolate curls

Instructions

  1. Preheat the oven according to the red velvet cake mix package instructions. Combine the cake mix, water, vegetable oil, and eggs in a large bowl. Mix until smooth.
  2. Pour the batter into a greased 9×13-inch baking dish and bake according to the package directions, approximately 30 minutes, or until a toothpick inserted into the center comes out clean.
  3. Place the white chocolate chips in a microwave-safe bowl and microwave in 15- to 30-second intervals, stirring between each interval until completely melted and smooth.
  4. Combine the melted white chocolate with the sweetened condensed milk. Stir until fully incorporated and smooth.
  5. Allow the baked cake to cool completely. Using the handle of a wooden spoon, poke holes in rows across the cake, spacing them approximately 1 to 2 inches apart.
  6. Slowly pour the white chocolate and sweetened condensed milk mixture over the entire cake, gently spreading it and encouraging the filling to enter the holes.
  7. Refrigerate the cake for at least 30 minutes to allow the filling to set.
  8. Spread an even layer of cream cheese frosting over the chilled cake.
  9. Sprinkle the Christmas sprinkles and white chocolate curls over the frosting.
  10. Return the cake to the refrigerator until ready to serve. Cut into squares and enjoy chilled.

Notes

  • Use a 9×13-inch baking dish for the best results.
  • Follow the cake mix package directions and use the specified baking temperature.
  • Allow the cake to cool completely before adding the white chocolate filling to prevent it from becoming too soggy.
  • Microwave white chocolate carefully in short intervals to prevent burning.
  • Use the handle of a wooden spoon to create evenly spaced holes. A large fork can also be used for smaller holes.
  • Refrigerate for at least 30 minutes after adding the filling before frosting.
  • Vanilla frosting can be substituted for cream cheese frosting.
  • For a peppermint variation, add 2 teaspoons of peppermint extract to the white chocolate filling.
  • Store covered in the refrigerator for a few days.
  • Prepare the cake a day ahead for easier holiday entertaining.
