Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the eggs and vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Chill the dough in the refrigerator for at least 30 minutes.
  7. For the cheesecake filling, beat the cream cheese until smooth. Add the sugar and vanilla extract, mixing until well combined.
  8. Scoop about 1 tablespoon of cookie dough and flatten it in your hand. Place about 1 teaspoon of the cheesecake filling in the center. Cover the filling with another tablespoon of cookie dough, sealing the edges to encase the filling.
  9. Place the cookies on the prepared baking sheet and bake for 12-15 minutes, until the edges are lightly golden.
  10. Allow the cookies to cool slightly.
  11. In a small bowl, mix together the sugar and cinnamon. Roll each warm cookie in the cinnamon-sugar mixture to coat evenly.
