Instructions

  1. Prepare the peach salsa by combining diced peaches, red bell pepper, red onion, green onions, cilantro, lime juice, chili powder, and salt in a bowl. Mix well and set aside.
  2. Season the sliced chicken breasts with smoked paprika, chili powder, salt, and black pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook undisturbed for 4 minutes to sear.
  4. Flip the chicken and cook for another 2 minutes until lightly browned.
  5. Reduce heat to low and add lime juice and honey. Stir frequently and cook for 2–3 more minutes until the chicken is fully cooked.
  6. Remove from heat and stir in butter until melted, then mix in fresh cilantro.
  7. Prepare bowls by adding cooked jasmine rice as the base.
