Description

This homemade cinnamon hard candy is a vibrant, spicy-sweet treat perfect for holidays, gifting, or nostalgic snacking. Made with simple ingredients, it delivers bold flavor and a satisfying crunch in every bite.

Ingredients

Scale
  • 1 cup water: Helps dissolve sugar and create the candy syrup
  • 3 3/4 cups granulated sugar: Provides sweetness and forms the hard candy structure
  • 1 1/4 cups light corn syrup: Prevents crystallization and gives a smooth texture
  • 1 teaspoon red liquid food coloring: Adds traditional fiery red color (optional)
  • 1 teaspoon cinnamon oil: Delivers the signature hot cinnamon flavor
  • 1/3 cup confectioners’ sugar: Used to coat the finished candy to prevent sticking

Instructions

  1. Line a 15x10x1-inch baking pan with foil and butter the foil. Set aside.
  2. In a large heavy-bottomed saucepan, combine water, granulated sugar, corn syrup, and food coloring. Stir gently to combine.
  3. Bring the mixture to a boil over medium heat, stirring occasionally. Cover and cook for 3 minutes to dissolve all sugar crystals.
  4. Uncover and cook on medium-high heat without stirring until a candy thermometer reads 300°F (hard-crack stage), about 25 minutes.
  5. Remove from heat and carefully stir in the cinnamon oil. Avoid inhaling fumes directly.
  6. Immediately pour the hot candy mixture into the prepared pan. Let it cool completely, about 45 minutes.
  7. Once hardened, break the candy into pieces using a mallet or similar tool.
  8. Dust both sides of the candy pieces with confectioners’ sugar to prevent sticking.

Notes

  • Use a candy thermometer to ensure you reach the hard-crack stage (300°F) for the right texture.
  • Handle cinnamon oil carefully; it’s very strong and can irritate eyes and skin.
  • Skip the food coloring if you’d like a clear version — flavor remains unchanged.
  • Store in an airtight container in a cool, dry place for up to one month.
