Description

These Cinnamon Roll Energy Bites are an easy no-bake snack made with natural almond butter, rolled oats, vanilla protein powder, maple syrup, and cinnamon, then finished with a light white chocolate drizzle. They are perfect for meal prep, breakfast, post-workout fuel, or a wholesome afternoon snack.


Ingredients

  • 1 cup natural creamy almond butter
  • 1/3 cup pure maple syrup
  • 1/2 cup vanilla protein powder
  • 2 teaspoons vanilla extract
  • 1/2 cup rolled oats
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon salt (or 1/4 teaspoon if using salted almond butter)
  • 1/2 cup white chocolate chips
  • 1 teaspoon coconut oil


Instructions

  1. In a large mixing bowl, combine the almond butter, maple syrup, vanilla protein powder, vanilla extract, rolled oats, cinnamon, and salt. Stir until a thick dough forms.
  2. Line a baking sheet or tray with wax paper or parchment paper.
  3. Using a 1 1/2 tablespoon cookie scoop, portion the dough into equal-sized balls.
  4. Roll each portion between your hands until smooth and place on the prepared tray.
  5. In a microwave-safe bowl, combine the white chocolate chips and coconut oil. Microwave in 10 to 15 second intervals, stirring after each interval, until completely melted.
  6. Drizzle the melted white chocolate over the energy bites.
  7. Refrigerate for about 1 hour, or until the bites are firm.
  8. Transfer the chilled energy bites to an airtight container and store in the refrigerator or freezer.

Notes

  • Use natural almond butter containing only almonds, oil, and salt for the best consistency.
  • If your almond butter already contains salt, reduce the added salt to about 1/4 teaspoon.
  • If the mixture is too dry, add a little more almond butter or maple syrup.
  • If the mixture is too wet, mix in additional rolled oats until firm enough to roll.
  • Store in the refrigerator for 5 to 7 days.
  • Freeze for up to 3 months in an airtight container.
  • Let frozen energy bites sit at room temperature for about 5 minutes before serving.
