These Cinnamon Roll Energy Bites are an easy no-bake snack made with natural almond butter, rolled oats, vanilla protein powder, maple syrup, and cinnamon, then finished with a light white chocolate drizzle. They are perfect for meal prep, breakfast, post-workout fuel, or a wholesome afternoon snack.

- 1 cup natural creamy almond butter
- 1/3 cup pure maple syrup
- 1/2 cup vanilla protein powder
- 2 teaspoons vanilla extract
- 1/2 cup rolled oats
- 1 1/2 teaspoons ground cinnamon
- 1 teaspoon salt (or 1/4 teaspoon if using salted almond butter)
- 1/2 cup white chocolate chips
- 1 teaspoon coconut oil
Instructions
- In a large mixing bowl, combine the almond butter, maple syrup, vanilla protein powder, vanilla extract, rolled oats, cinnamon, and salt. Stir until a thick dough forms.
- Line a baking sheet or tray with wax paper or parchment paper.
- Using a 1 1/2 tablespoon cookie scoop, portion the dough into equal-sized balls.
- Roll each portion between your hands until smooth and place on the prepared tray.
- In a microwave-safe bowl, combine the white chocolate chips and coconut oil. Microwave in 10 to 15 second intervals, stirring after each interval, until completely melted.
- Drizzle the melted white chocolate over the energy bites.
- Refrigerate for about 1 hour, or until the bites are firm.
- Transfer the chilled energy bites to an airtight container and store in the refrigerator or freezer.
Notes
- Use natural almond butter containing only almonds, oil, and salt for the best consistency.
- If your almond butter already contains salt, reduce the added salt to about 1/4 teaspoon.
- If the mixture is too dry, add a little more almond butter or maple syrup.
- If the mixture is too wet, mix in additional rolled oats until firm enough to roll.
- Store in the refrigerator for 5 to 7 days.
- Freeze for up to 3 months in an airtight container.
- Let frozen energy bites sit at room temperature for about 5 minutes before serving.
