  • 5 nectarines, sliced
  • 1 cup self-rising flour
  • 1 cup granulated sugar
  • 3/4 cup whole or 2% milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons granulated sugar (for cinnamon sugar)
  • 1/4 teaspoon ground cinnamon (for cinnamon sugar)


Instructions

  1. Preheat the oven to 350°F (175°C). Place the butter in a 9×9-inch baking dish and let it melt in the oven while you prepare the other ingredients.
  2. Slice the nectarines about 1/2-inch thick, discarding the pits.
  3. In a separate bowl, stir together the self-rising flour and granulated sugar. Add the milk and vanilla extract and stir until smooth.
  4. Once the butter has melted, arrange the sliced nectarines in the baking dish over the butter.
  5. Pour the batter over the nectarines and melted butter. Do not stir.
  6. In a small bowl, mix the cinnamon and sugar for the cinnamon sugar topping. Sprinkle it evenly over the batter.
  7. Bake for 40 minutes, or until the top is golden brown and the fruit is bubbly around the edges. The cobbler should have a slightly crunchy edge and a soft, cake-like center.
  8. Allow the cobbler to cool slightly before serving. Optionally, serve with vanilla ice cream or whipped cream.

Notes

  • For a gluten-free version, substitute self-rising flour with a gluten-free flour blend.
  • If you don’t have self-rising flour, use 1 cup all-purpose flour with 2 teaspoons baking powder.
