Description

Ingredients

  • 4 boneless skinless chicken breasts
  • 1/2 cup olive oil
  • 2 tablespoons Dijon mustard
  • Juice of 1 lime
  • Juice of 1 lemon
  • Juice of 2 oranges
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning (or Herbs de Provence)
  • 1 teaspoon fresh thyme (finely chopped)
  • 1 teaspoon fresh oregano (finely chopped)
  • 1/4 teaspoon crushed red pepper flakes


Instructions

  1. In a mixing bowl, whisk together olive oil, Dijon mustard, lime juice, lemon juice, orange juice, garlic powder, Italian seasoning, fresh thyme, fresh oregano, and crushed red pepper flakes.
  2. Take 1/4 cup of the marinade and set it aside for later use.
  3. Place the chicken breasts in a zip-close bag or bowl and pour the marinade over it. Toss to coat the chicken evenly. Refrigerate for at least 1 hour or up to overnight.
  4. Preheat the grill to medium-high and oil the grates to prevent sticking.
  5. Remove the chicken from the marinade and place it on the grill. Grill for 5-7 minutes per side. Brush the reserved marinade onto the second side as it cooks.
  6. Check the chicken’s internal temperature, ensuring it reaches 165°F (74°C) and the juices run clear.
  7. Remove from the grill and garnish with fresh herbs and citrus wedges before serving.

Notes

  • For the best flavor, marinate the chicken for at least 1 hour but up to 12 hours.
  • Use tongs when handling the chicken to avoid tearing the meat.
  • Reserve a portion of the marinade before adding it to the chicken to avoid cross-contamination.
  • If grilling isn’t an option, bake the chicken at 375°F (190°C) for 20-25 minutes.
