Description

Creamy Coconut Chicken and Zucchini Curry made with tender chicken, fresh zucchini, yellow curry powder, turmeric, coconut milk, and a sweet-spicy garlic chili butter. This easy 40-minute curry is delicious served over steamed rice with fresh herbs, toasted cashews, lime, and warm naan.

  • 6 tablespoons salted butter or ghee, divided
  • 1 1/2 pounds boneless, skinless chicken breasts or thighs, cut into bite-size pieces
  • 1 yellow onion, chopped
  • 1 teaspoon sweet paprika
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground turmeric
  • 2 tablespoons yellow curry powder, divided
  • 2 medium zucchini or yellow summer squash, sliced
  • 1 can (14 ounces) full-fat coconut milk
  • 1/4 teaspoon cayenne pepper, or to taste
  • Salt and black pepper, to taste
  • 3 cloves garlic, finely chopped or sliced
  • 1 teaspoon chili flakes, or to taste
  • 1 tablespoon honey
  • Cooked rice, for serving
  • Fresh cilantro, for serving
  • Fresh Thai basil, for serving
  • Toasted cashews, for serving
  • Lime wedges, for serving
  • Warm naan, optional for serving


Instructions

  1. Melt 2 tablespoons of butter or ghee in a Dutch oven over medium-high heat.
  2. Add the onion, chicken, sweet paprika, smoked paprika, turmeric, and 1 tablespoon of the yellow curry powder. Season with salt and black pepper. Toss to combine and cook for about 5 minutes, until the chicken is lightly browned but not necessarily cooked through.
  3. Add the sliced zucchini and pour in the coconut milk. Stir well, partially cover, and simmer for 8 to 10 minutes, until the chicken is fully cooked, the zucchini is tender, and the sauce has thickened slightly.
  4. Stir in the remaining 1 tablespoon curry powder and the cayenne pepper. Taste and adjust the seasoning as needed.
  5. Meanwhile, melt the remaining 4 tablespoons butter or ghee in a skillet over medium heat. Add the garlic and cook until golden and fragrant, watching carefully so it does not burn.
  6. Remove the skillet from the heat and stir in the chili flakes and honey to make the chili butter.
  7. Spoon steamed rice into serving bowls and ladle the Coconut Chicken and Zucchini Curry over the rice.
  8. Drizzle with chili butter and finish with fresh cilantro or Thai basil, toasted cashews, and a squeeze of fresh lime. Serve with warm naan if desired.

Notes

  • Chicken breasts or boneless, skinless chicken thighs can both be used. Thighs tend to remain especially juicy.
  • Green zucchini, yellow summer squash, or a combination of both work well in this curry.
  • Do not overcook the zucchini; it should be tender while still holding its shape.
  • Add the curry powder in two stages for deeper flavor and a fresher curry aroma.
  • For a milder curry, reduce or omit the cayenne and serve the chili butter on the side.
  • Bell peppers, broccoli, spinach, or green beans can be added or substituted for some of the zucchini.
  • For a vegetarian variation, replace the chicken with chickpeas.
  • Store the curry and rice separately for the best texture.
  • The curry can be frozen without the rice and toppings for up to 3 months.
  • Chicken should reach an internal temperature of 165°F (74°C) before serving.
