Description

  • 240 ml (1 cup) whole milk
  • 2 1/4 teaspoons yeast
  • 50 g (1/4 cup) granulated sugar
  • 530 g (4 1/4 cups) all-purpose flour
  • 2 large eggs
  • 1 teaspoon salt
  • 85 g (6 tablespoons) butter, softened
  • 55 g (4 tablespoons) butter (for filling)
  • 100 g (1/2 cup) brown sugar
  • 1 1/2 teaspoons ground cinnamon
  • 2 teaspoons instant coffee powder
  • 30 ml (2 tablespoons) milk (for frosting)
  • 1/2 tablespoon instant coffee powder (for frosting)
  • 113 g (4 oz) cream cheese
  • 30 g (2 tablespoons) butter (for frosting)
  • 180 g (1 1/2 cups) confectioners’ sugar
  • 1/2 teaspoon vanilla extract


Instructions

  1. Warm the milk to about 95–104°F (35–40°C) and mix with yeast and sugar. Let sit until foamy if using active dry yeast.
  2. Add flour, salt, and eggs, then mix until a dough forms.
  3. Incorporate softened butter gradually and knead for about 10 minutes until smooth and elastic.
  4. Place dough in a greased bowl, cover, and let rise for 1 to 1.5 hours until doubled.
  5. Mix butter, brown sugar, cinnamon, and coffee powder to prepare the filling.
  6. Roll dough into a 12×16 inch rectangle and spread filling evenly.
  7. Roll tightly into a log and cut into 12 equal pieces.
  8. Arrange rolls in a greased baking dish and let rise again until puffy.
  9. Bake at 350°F (180°C) for 25–28 minutes until golden brown.
  10. Mix warm milk with coffee powder, then beat with cream cheese, butter, sugar, and vanilla to make frosting.
  11. Cool rolls slightly and spread frosting on top before serving.

  • Ensure milk is lukewarm, not hot, to avoid killing the yeast.
  • Knead the dough until it passes the windowpane test for best texture.
  • Use espresso powder for a stronger coffee flavor.
