Description

These creamy, no-bake Coffee Truffles are rich, indulgent treats made with a velvety coffee-infused filling and coated in smooth chocolate. Perfect for coffee lovers and easy to customize for keto or vegan diets.

  • 4 oz cream cheese or coconut butter: forms the creamy base of the truffle filling
  • 2 tbsp butter or additional coconut butter: adds richness and firmness
  • 3 tbsp powdered sugar or powdered erythritol: sweetens and smooths the filling
  • 1/2 tsp instant coffee: provides bold coffee flavor
  • 3 oz chocolate chips or chopped chocolate (optional): used for coating the truffles
  • 1/2 tsp coconut or vegetable oil (optional): for smoother melted chocolate coating


Instructions

  1. Bring cream cheese and butter (or coconut butter) to room temperature until softened.
  2. In a mixing bowl, combine softened ingredients with powdered sweetener and instant coffee.
  3. Whip using a hand mixer until smooth and creamy. Alternatively, stir with a fork if needed.
  4. Spread the mixture into a shallow container or chill until firm enough to scoop.
  5. Form into small balls using a mini scoop or spoon, and place on parchment-lined plate.
  6. Chill in the freezer until firm.
  7. Optional: Melt chocolate chips with coconut or vegetable oil until smooth.
  8. Dip truffle balls in chocolate and return to parchment to set.
  9. For a clean look, slice truffles in half once chocolate is set.
  10. Store in the fridge for 5 days or freeze up to 2 months.
