Description

  • 1/2 cup (50 g) unsweetened cocoa powder
  • 1 teaspoon instant espresso powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1 cup (120 g) all-purpose flour
  • 1/4 cup (45 g) mini chocolate chips


Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
  2. Add the eggs, cottage cheese, and olive oil to a blender and blend for about 10 seconds until completely smooth.
  3. Pour the blended mixture into a large mixing bowl and whisk in the maple syrup until fully combined.
  4. Add cocoa powder, espresso powder, vanilla extract, salt, and baking powder. Whisk until the mixture is smooth and free of lumps.
  5. Stir in the all-purpose flour gently until just combined. Avoid overmixing.
  6. Pour the batter into the prepared baking pan and spread evenly with a spatula.
  7. Sprinkle mini chocolate chips evenly over the top of the batter.
  8. Bake for 18–25 minutes, or until the edges are set and the top appears shiny.
  9. Allow the brownies to cool completely in the pan before slicing into squares and serving.
