Description

This Cottage Cheese Pasta Salad is a creamy, high-protein twist on the classic pasta salad.   • 12 ounces (340 g) farfalle pasta
  • 1 cup (225 g) cottage cheese
  • 1 medium cucumber, seeded and diced (about 1 1/2 cups)
  • 1 cup cherry tomatoes, halved
  • 1 medium yellow bell pepper, diced
  • 1/2 cup fresh spinach, chopped
  • 1/3 cup Italian dressing
  • Juice of 1 medium lemon (about 2 tablespoons)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon sea salt, or to taste
  • 1/4 teaspoon freshly ground black pepper, or to taste


Instructions

  1. Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente.
  2. Drain the pasta and rinse it under cold water to stop the cooking process. Allow it to drain completely.
  3. Dice the cucumber, halve the cherry tomatoes, dice the bell pepper, and roughly chop the spinach.
  4. Add the cooled pasta and chopped vegetables to a large mixing bowl.
  5. Pour the Italian dressing over the pasta mixture, then add the fresh lemon juice, oregano, salt, and black pepper. Toss until evenly coated.
  6. Gently fold in the cottage cheese until well distributed without breaking it down too much.
  7. Taste and adjust seasoning or add a little more dressing if desired.
  8. Cover and refrigerate for at least 30 minutes before serving. Serve chilled.

Notes

  • Cook the pasta only until al dente to prevent it from becoming mushy.
  • Rinse cooked pasta with cold water to cool it quickly.
  • Use full-fat, low-fat, or fat-free cottage cheese according to your preference.
