Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, and salt. Set aside.
  3. In a large bowl, cream softened butter and sugar until light and fluffy.
  4. Beat in the egg, vanilla extract, almond extract, and optional cotton candy flavoring.
  5. Gradually mix in the dry ingredients until just combined—avoid overmixing.
  6. Divide dough into two equal portions. Color one with pink food coloring and the other with blue. Knead until colors are even.
  7. Take small pieces of each colored dough, press them together, roll into a ball, and slightly flatten. Add sprinkles if using.
  8. Place cookies on the prepared baking sheet and bake for 8–10 minutes, until edges are set and centers remain soft.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
