- 1/2 pound thick-cut bacon, chopped
- 1 small yellow onion, diced
- 3 cloves garlic, minced
- 1 pound lean ground beef
- 1 tablespoon chili powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3 cans (15 ounces each) pork and beans, not drained
- 1 can (15 ounces) cannellini beans, drained
- 1 can (15 ounces) kidney beans, drained
- 1 cup barbecue sauce
- 1/2 cup ketchup
- 1/4 cup brown sugar
- 2 tablespoons yellow mustard
- 1 tablespoon Worcestershire sauce
- 1 tablespoon apple cider vinegar
Instructions
- Preheat the oven to 350°F (175°C).
- In a large Dutch oven or heavy-bottomed pot, cook the chopped bacon over medium heat until crispy, about 8 minutes. Remove the bacon with a slotted spoon and set aside.
- Leave about 1 tablespoon of bacon grease in the pot. Add the diced onion and sauté for 3 to 4 minutes until softened.
- Add the minced garlic and cook for 30 seconds until fragrant.
- Add the ground beef and cook until browned and fully cooked, breaking it apart with a spoon as it cooks. Drain excess grease if necessary.
- Return the cooked bacon to the pot and stir in the chili powder, salt, and black pepper.
- Add the pork and beans, cannellini beans, kidney beans, barbecue sauce, ketchup, brown sugar, yellow mustard, Worcestershire sauce, and apple cider vinegar. Stir well until fully combined.
- Transfer the pot to the oven and bake uncovered for 45 minutes until hot, bubbly, and slightly thickened.
- Remove from the oven and let the Cowboy Beans rest for 5 minutes before serving warm.
