Description

Cowboy Beans are a hearty and flavorful comfort food dish made with crispy bacon, lean ground beef, mixed beans, and a smoky-sweet barbecue sauce.   • 1/2 pound thick-cut bacon, chopped
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 pound lean ground beef
  • 1 tablespoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cans (15 ounces each) pork and beans, not drained
  • 1 can (15 ounces) cannellini beans, drained
  • 1 can (15 ounces) kidney beans, drained
  • 1 cup barbecue sauce
  • 1/2 cup ketchup
  • 1/4 cup brown sugar
  • 2 tablespoons yellow mustard
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon apple cider vinegar


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large Dutch oven or heavy-bottomed pot, cook the chopped bacon over medium heat until crispy, about 8 minutes. Remove the bacon with a slotted spoon and set aside.
  3. Leave about 1 tablespoon of bacon grease in the pot. Add the diced onion and sauté for 3 to 4 minutes until softened.
  4. Add the minced garlic and cook for 30 seconds until fragrant.
  5. Add the ground beef and cook until browned and fully cooked, breaking it apart with a spoon as it cooks. Drain excess grease if necessary.
  6. Return the cooked bacon to the pot and stir in the chili powder, salt, and black pepper.
  7. Add the pork and beans, cannellini beans, kidney beans, barbecue sauce, ketchup, brown sugar, yellow mustard, Worcestershire sauce, and apple cider vinegar. Stir well until fully combined.
  8. Transfer the pot to the oven and bake uncovered for 45 minutes until hot, bubbly, and slightly thickened.
  9. Remove from the oven and let the Cowboy Beans rest for 5 minutes before serving warm.

  • For extra smoky flavor, use hickory-smoked barbecue sauce.
  • Adjust sweetness by reducing or increasing the brown sugar to taste.
