These colorful tortilla roll-ups are perfect for Christmas parties, Thanksgiving gatherings, potlucks, and entertaining. Prepare them ahead, chill until firm, and slice into beautiful bite-sized spirals.
Ingredients
Scale
- 2 large flour tortillas
- 8 ounces cream cheese, softened
- 3/4 cup crumbled feta cheese
- 3/4 cup dried sweetened cranberries, chopped if desired
- 1/4 cup green onions, finely chopped
Instructions
- Place the softened cream cheese in a medium mixing bowl.
- Add the crumbled feta cheese, dried cranberries, and finely chopped green onions. Mix until evenly combined.
- Lay the tortillas flat on a clean work surface. Divide the filling evenly between the tortillas.
- Spread the filling into a thin, even layer, reaching close to the edges of each tortilla.
- Starting at one edge, roll each tortilla tightly into a compact cylinder without squeezing out the filling.
- Wrap each tortilla roll tightly in plastic wrap and refrigerate for at least 1 hour, or until firm.
- Unwrap the chilled rolls and use a sharp knife to cut each roll into approximately 12 slices.
- Arrange the pinwheels on a serving platter with the spiral sides facing upward. Serve chilled.
Notes
- Soften the cream cheese before mixing to make the filling easier to spread.
- Chop large dried cranberries into smaller pieces for easier rolling and cleaner slices.
- Use fresh, flexible tortillas to prevent cracking.
- Roll the tortillas firmly but gently to keep the filling inside.
- Refrigerate the rolls for at least 1 hour before slicing to help them hold their shape.
- Prepare the unsliced rolls up to 2 days ahead and slice shortly before serving.
- Store leftovers in an airtight container in the refrigerator and enjoy within 3 days, provided they have been handled safely.
- Freezing is not recommended because the cream cheese filling and tortillas may change texture after thawing.
- Keep the pinwheels refrigerated and do not leave them at room temperature for more than 2 hours, or more than 1 hour when temperatures exceed 90°F (32°C).
- For a gluten-free version, use certified gluten-free tortillas and check all ingredient labels.
