Description

Cranberry Christmas Cake is a festive homemade dessert featuring tart cranberries, buttery cake, vanilla, and fragrant orange zest. This easy holiday cake has a tender interior and a delicate golden top, making it perfect for Christmas dinner, holiday parties, brunch, or an afternoon treat with coffee. Made with simple ingredients and fresh or frozen cranberries, this delicious cake is easy to prepare and share with family and friends.

Ingredients

Scale
  • 3 large eggs, at room temperature
  • 2 cups granulated sugar
  • 3/4 cup unsalted butter, at room temperature
  • 1 teaspoon vanilla extract
  • 2 teaspoons orange zest
  • 2 cups all-purpose flour
  • 12 ounces fresh or frozen whole cranberries

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9-by-13-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. In the bowl of a stand mixer fitted with the whisk attachment, beat the eggs and granulated sugar on medium speed for approximately 6 minutes, until the mixture is pale, thick, fluffy, and ribbon-like.
  3. Add the softened butter, vanilla extract, and orange zest. Beat on medium speed for another 2 minutes until the ingredients are incorporated.
  4. Replace the whisk attachment with the paddle attachment. Gradually add the flour on low speed and mix just until incorporated. Avoid overmixing.
  5. Gently fold the fresh or frozen cranberries into the batter until evenly distributed. Do not thaw frozen cranberries before adding them.
  6. Spread the thick batter evenly into the prepared baking pan and smooth the top with a spatula.
  7. Bake for 40–50 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean or with a few dry crumbs.
  8. Remove the cake from the oven and let it cool in the pan for at least 1 hour before removing and slicing. Serve at room temperature.

Notes

  • Use room-temperature eggs and butter for easier mixing and a more consistent batter.
  • Beat the eggs and sugar thoroughly to create the cake’s characteristic light texture.
  • Fresh or frozen cranberries both work well. Add frozen cranberries directly to the batter without thawing.
  • Measure the flour carefully to prevent a dry or dense cake.
  • Mix the flour only until incorporated to keep the cake tender.
  • Oven temperatures vary, so begin checking for doneness around 40 minutes.
  • Allow the cake to cool completely before storing to prevent condensation from softening the top.
  • Store in an airtight container at room temperature for up to 3 days.
  • For longer storage, wrap the cooled cake securely and freeze for the best quality for up to 30 days.
  • Serve plain or with powdered sugar, whipped cream, or vanilla ice cream.
