Description

Cranberry Pecan Cheese Ball Bites are an easy, festive appetizer made with creamy cheese, pepper jack, sweet dried cranberries, crunchy pecans, fresh chives, and savory seasonings. Each mini cheese ball is finished with a pretzel stick for convenient serving, making these bites perfect for Thanksgiving, Christmas, holiday parties, game day, and other gatherings.

Ingredients

Scale
  • 2 (8-ounce) blocks cream cheese, softened
  • 2 cups pepper jack cheese, shredded
  • 2 cups dried cranberries, chopped and divided
  • 2 cups pecans, chopped and divided
  • 1/4 cup fresh chives, chopped and divided
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 25 pretzel sticks

Instructions

  1. Add the softened cream cheese, shredded pepper jack cheese, 1 cup chopped pecans, 1 cup chopped dried cranberries, half of the chopped chives, salt, onion powder, and black pepper to the bowl of a stand mixer.
  2. Using the paddle attachment, mix on medium speed until the cheese mixture is creamy and the ingredients are evenly combined.
  3. Scoop approximately 1 tablespoon of the mixture at a time and roll it gently between your hands to form a ball. Arrange the cheese balls on a baking sheet lined with wax paper or parchment paper.
  4. Refrigerate the shaped cheese balls for about 2 hours, or until firm enough to coat without losing their shape.
  5. Combine the remaining chopped pecans, dried cranberries, and chives in a small bowl and mix well.
  6. Roll each chilled cheese ball in the cranberry pecan mixture, gently pressing the coating onto the surface until evenly covered.
  7. Insert a pretzel stick into the center of each cheese ball shortly before serving.
  8. Keep the Cranberry Pecan Cheese Ball Bites refrigerated until ready to serve. Serve chilled with additional crackers, pretzels, apple slices, or other favorite accompaniments.

Notes

  • Soften the cream cheese before mixing so the filling becomes smooth and creamy.
  • Use approximately 1 tablespoon of cheese mixture for each bite to produce about 25 evenly sized appetizers.
  • Chop the cranberries and pecans relatively finely so they distribute evenly and adhere easily to the cheese balls.
  • Do not skip the 2-hour chilling period because refrigeration helps the cheese balls become firm and hold their shape.
  • White cheddar can replace pepper jack cheese for a milder flavor.
  • Parsley or green onions can be substituted for the fresh chives.
  • Garlic powder can be used instead of onion powder for a different savory flavor.
  • Add the pretzel sticks shortly before serving to prevent them from becoming soft.
  • Keep leftovers refrigerated in an airtight container and, for best quality and food safety, enjoy within 3 to 4 days.
